Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, finely chopped
- 1/2 cup softened cream cheese
- 1/4 cup grated Parmesan cheese
- 2 minced garlic cloves
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
Preheat the oven to 375°F (190°C).
Carefully cut a pocket into the side of each chicken breast using a sharp knife.
In a mixing bowl, combine spinach, cream cheese, Parmesan, garlic, Italian herbs, salt, and pepper.
Stuff each chicken breast pocket with the spinach mixture, and use toothpicks to secure the filling.
Heat olive oil in a skillet over medium heat, searing each chicken breast until golden brown, about 3-4 minutes per side.
Place the seared chicken breasts in a baking dish and bake for 20-25 minutes, or until fully cooked through and no longer pink inside.
