- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme (or 2 teaspoons fresh thyme, chopped)
- 2 tablespoons unsalted butter, melted
- 1 teaspoon salt (adjust to taste)

Instructions
- Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season generously with salt, pepper, smoked paprika, and dried thyme.
- Layer the Aromatics: In the slow cooker, create a base layer with sliced onions and minced garlic. This helps develop deep flavors while preventing sticking.
- Sear for Extra Flavor (Optional): For an extra depth of flavor, quickly sear the pork chops in a hot skillet with a little oil for about 1-2 minutes per side before placing them in the slow cooker.
- Assemble in the Slow Cooker: Arrange the seasoned pork chops over the onions. Scatter the halved potatoes around and on top of the meat.
- Mix the Sauce: In a small bowl, whisk together the chicken broth, Worcestershire sauce, Dijon mustard, and melted butter. Pour this mixture over everything in the slow cooker.
- Slow Cook to Perfection: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the pork is tender and potatoes are fork-soft.
- Serve & Enjoy: Plate the pork chops with a generous portion of buttery potatoes and a spoonful of the delicious slow-cooked sauce. Garnish with fresh thyme or parsley if desired.
