Slow Cooker Poor Man’s Stew

Who can resist a simple slow cooker recipe? Especially one that’s easy on the wallet and requires only a few ingredients.

Poor Man’s Ground Beef Stew is the perfect “Crockpot dump” meal, and it’s great for using up any veggies you have in your fridge.

We created this recipe with our favorite combination of ingredients, including potatoes and carrots.

Ingredients:

1 lb ground beef

1.5 lbs (about 3) large-diced potatoes

3 sliced carrots

1 diced onion

1-2 minced garlic cloves

6 oz can of tomato paste

2 cups of water or broth

1 tsp salt

¼ tsp black pepper

1 tsp onion powder

1 tsp dried oregano

Instructions:

Step 1: Brown the ground beef, drain the fat, and set aside.

Step 2: Dice the potatoes, onion, and slice the carrots.

Step 3: In a bowl, whisk together the tomato paste, salt, pepper, garlic, onion powder, and oregano.

Step 4: Add all the ingredients to the crockpot, then pour in water or broth. Stir everything together.

Step 5: Cook on low for about 7 hours. Keep in mind that lifting the lid extends cooking time, so resist the urge to peek!

Step 6: Serve and enjoy! We love to pair it with fresh bread for dipping, and it’s also delicious topped with shredded cheddar cheese.
