Ingredients:

3 pounds of lean ground beef

1 can (15 ounces) of tomato puree

1 can (10 3/4 ounces) of condensed cream of mushroom soup

1 can (10 1/2 ounces) of condensed French onion soup with beef stock

3/4 cup of water

1 bag (28 ounces) of thawed frozen O’Brien potatoes with onions and peppers

4 medium-sized carrots, diced (about 2 cups)

1 teaspoon of salt

1-2 cups of shredded cheddar cheese

Instructions:

In a 12-inch skillet, cook the ground beef over medium-high heat for roughly 10 minutes, stirring occasionally until browned. Drain any excess fat.

In a medium bowl, combine the tomato puree with the mushroom soup, then stir in the onion soup and water.

Lightly coat a 5- to 6-quart slow cooker with cooking spray. Set aside 1 cup of the potatoes. In the slow cooker, gently mix the beef, the remaining potatoes, carrots, salt, and the soup mixture. Sprinkle the reserved potatoes and shredded cheese on top.
