Sausage Potato Bake

The Sausage Potato Bake is a filling and delightful casserole ideal for a cozy family dinner. With its blend of sausage, potatoes, and cheese, this one-pan dish offers a burst of flavor in every bite.

Ingredients:

2 teaspoons olive oil

2 pounds Italian sausage links, cut into 2-inch pieces

1/4 cup olive oil

4 large potatoes, peeled and cut into thick slices

2 large green bell peppers, seeded and cut into wedges

2 large red bell peppers, seeded and cut into wedges

3 large onions, cut into wedges

1/2 cup white wine

1/2 cup chicken stock

1 teaspoon Italian seasoning

Salt and pepper to taste

Directions:

Step 1: Preheat your oven to 400°F (200°C).

Step 2: In a large skillet over medium heat, warm 2 teaspoons of olive oil. Add the sausage pieces and cook, stirring occasionally, until they are nicely browned. Transfer the browned sausage to a large baking dish.

Step 3: Add 1/4 cup of olive oil to the skillet. Sauté the potatoes, stirring occasionally, until they start to brown, about 10 minutes. Transfer the potatoes to the baking dish with the sausage, leaving some of the oil in the skillet.

Step 4: In the same skillet, cook the green and red bell peppers along with the onions until they begin to soften, about 5 minutes. Add these vegetables to the baking dish.

Step 5: Pour the white wine and chicken stock over the sausage and vegetables. Season with Italian seasoning, salt, and pepper. Gently toss everything together to mix.

Step 6: Bake in the preheated oven until everything is hot and bubbly, about 20 to 25 minutes. Serve hot.
