BROCCOLI CHEDDAR SOUP
This Panera Broccoli Cheddar Soup recipe may have made its way across various blogs, but I’m here to share the recipes I truly adore, and this one tops the list.
I can confidently say it tastes just like Panera’s Broccoli Cheddar Soup because it was my go-to meal at least once a week during my last pregnancy.
Ingredients:
1 tablespoon butter, melted
1/2 medium onion, chopped
1/4 cup butter, melted
1/4 cup flour
2 cups half-and-half cream
2 cups chicken stock
1/2 lb fresh broccoli
1 cup julienned carrots
1/4 teaspoon nutmeg
8 ounces sharp cheddar cheese, grated
Salt and pepper to taste
Instructions:
Step 1: Sauté the chopped onion in butter and set aside.
Step 2: In a separate pan, whisk together the melted butter and flour over medium heat for 3-5 minutes, stirring constantly. Slowly add the half-and-half.
Step 3: Pour in the chicken stock and let it simmer for 20 minutes.
Step 4: Add the broccoli, carrots, and sautéed onions. Cook on low heat for 20-25 minutes.
