MEXICAN TORTILLA CASSEROLE

Liven up your dinner table with this Mexican Tortilla Casserole. Featuring layers of tortillas, flavorful meat, beans, and cheese, this dish serves up a vibrant blend of tastes that’s both satisfying and perfect for the whole family.

Ingredients:

1 lb. ground beef

1/2 cup diced onion

1 pack taco seasoning mix

2 cups shredded cheddar cheese

1 can refried beans (warm in the microwave for easier spreading)

1 cup cooked rice (I used Minute Rice)

1 can Mexican blend corn (drained, you’ll use about half the can)

4-5 large flour tortillas

8 oz thick chunky salsa (choose mild or hot based on your preference)

Instructions:

Step 1: Preheat your oven to 350°F and grease a springform pan, round cake pan, or casserole dish with cooking spray.

Step 2: Brown the ground beef and diced onion in a skillet, then drain the excess grease.

Step 3: Stir in the taco seasoning and cook according to the package instructions.

Step 4: Place one tortilla at the bottom of the prepared baking dish. Spread 1/3 of the refried beans over the tortilla, followed by 1/3 of the seasoned meat, and sprinkle with cheese.

Step 5: Add a second tortilla, then layer on half the rice, half the salsa, half the corn, and more cheese.

Step 6: For the third layer, place another tortilla, spread with 1/3 of the beans, 1/3 of the meat, and top with cheese.

Step 7: Finish with a fourth tortilla and layer on the remaining beans, meat, corn, rice, salsa, and cheese.

Step 8: Cover the dish with foil and bake for about 40 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Let the dish sit for 5 minutes before slicing. If desired, top with sour cream, diced onions, and shredded lettuce before serving. Enjoy!
