Ingredients:
4 boneless, skinless chicken breasts
1 cup pineapple juice
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon ground ginger
Salt and pepper to taste
Fresh pineapple slices for garnish
Directions:
- In a mixing bowl, combine pineapple juice, honey, soy sauce, olive oil, garlic powder, ginger, salt, and pepper, whisking until well blended.
- Place the chicken breasts in a resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, making sure all pieces are well covered.
- Seal the bag or cover the dish and refrigerate for at least 2 hours (overnight is best for maximum flavor).
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and grill marks appear.
- In the last few minutes of grilling, add pineapple slices to the grill, cooking until they’re warmed and slightly charred.
- Serve the grilled chicken topped with the pineapple slices.
