Honey Pineapple Grilled Chicken

Ingredients:

4 boneless, skinless chicken breasts

1 cup pineapple juice

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon ground ginger

Salt and pepper to taste

Fresh pineapple slices for garnish

Directions:

  1. In a mixing bowl, combine pineapple juice, honey, soy sauce, olive oil, garlic powder, ginger, salt, and pepper, whisking until well blended.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish.
  3. Pour the marinade over the chicken, making sure all pieces are well covered.
  4. Seal the bag or cover the dish and refrigerate for at least 2 hours (overnight is best for maximum flavor).
  5. Preheat the grill to medium-high heat.
  6. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and grill marks appear.
  7. In the last few minutes of grilling, add pineapple slices to the grill, cooking until they’re warmed and slightly charred.
  8. Serve the grilled chicken topped with the pineapple slices.
