Ingredients
- 1 pound of lean ground beef
- 1 packet of dry onion soup mix
- 4 small potatoes, peeled and sliced
- 2 cups of chopped carrots
- 1 large onion or 2 small onions, sliced
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 can (10.5 ounces) of condensed cream of mushroom soup
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the ground beef with the dry onion soup mix. Shape the mixture into four patties and set them aside.
- In a large bowl, mix together the potatoes, carrots, onions, olive oil, garlic powder, salt, and pepper until well coated.
- Prepare a 12″ x 18″ piece of aluminum foil by spraying it with non-stick spray.
- Place one-fourth of the vegetable mixture in the center of the foil. Top with one beef patty and then spoon 2 tablespoons of condensed cream of mushroom soup over each patty.
- Seal the foil packets tightly. Place them beef side up on a large baking sheet. Bake for 35-45 minutes, or until the potatoes and carrots are tender.
Notes
These foil packets can also be grilled at medium heat for about 45 minutes, or until the potatoes are tender and the ground beef reaches an internal temperature of 160°F.
