Garlic Parmesan Chicken Skewers

Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup olive oil

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon dried Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped

Wooden skewers (soak for 30 minutes)

Instructions:

  1. In a large bowl, whisk together the olive oil, garlic, Parmesan, Italian seasoning, salt, and black pepper.
  2. Add the chicken cubes to the mixture, tossing them to ensure they’re fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat your grill to medium-high. Skewer the marinated chicken onto the pre-soaked wooden skewers.
  4. Grill the skewers for 10-12 minutes, turning them occasionally until the chicken is thoroughly cooked and slightly charred.
  5. Garnish with fresh parsley before serving.
