Garlic Chicken with Broccoli and Spinach

Ingredients:

4 boneless, skinless chicken breasts

4 cloves of garlic, finely minced

1 tablespoon of olive oil

1 teaspoon of salt

1/2 teaspoon of black pepper

1/2 teaspoon of paprika

1 cup of broccoli florets

1 cup of fresh spinach leaves

1/2 cup of chicken broth

1 tablespoon of lemon juice

Optional: Grated Parmesan cheese for garnish

Instructions:

  1. Season the chicken breasts with the salt, pepper, and paprika.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and cook for about 1 minute, just until fragrant.
  3. Place the seasoned chicken breasts in the skillet and sear for about 5 minutes on each side, until golden brown and fully cooked.
  4. Once the chicken is done, remove it from the skillet and set it aside.
  5. Using the same skillet, toss in the broccoli florets and sauté for around 3 minutes.
  6. Add the spinach and chicken broth to the skillet, and cook for an additional 4 minutes until the spinach has wilted and the broccoli is tender.
  7. Return the chicken breasts to the skillet, drizzle with the lemon juice, and heat through for a final minute.
  8. Serve hot, with an optional sprinkle of grated Parmesan for extra flavor.
