Ingredients:
4 boneless, skinless chicken breasts
4 cloves of garlic, finely minced
1 tablespoon of olive oil
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of paprika
1 cup of broccoli florets
1 cup of fresh spinach leaves
1/2 cup of chicken broth
1 tablespoon of lemon juice
Optional: Grated Parmesan cheese for garnish
Instructions:
- Season the chicken breasts with the salt, pepper, and paprika.
- In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and cook for about 1 minute, just until fragrant.
- Place the seasoned chicken breasts in the skillet and sear for about 5 minutes on each side, until golden brown and fully cooked.
- Once the chicken is done, remove it from the skillet and set it aside.
- Using the same skillet, toss in the broccoli florets and sauté for around 3 minutes.
- Add the spinach and chicken broth to the skillet, and cook for an additional 4 minutes until the spinach has wilted and the broccoli is tender.
- Return the chicken breasts to the skillet, drizzle with the lemon juice, and heat through for a final minute.
- Serve hot, with an optional sprinkle of grated Parmesan for extra flavor.
