Enhance your pot roast by infusing it with the rich flavors of French Onion in this delectable French Onion Pot Roast. This savory and comforting dish is ideal for cozy family dinners.
Ingredients:
2-3 lb. beef pot roast
10.5 oz. can of French onion soup
2-3 cups of water
Salt and pepper to taste
1 tablespoon vegetable oil
8 large button mushrooms, cleaned and quartered
2 large carrots, peeled and sliced
You can prepare this dish in the oven by browning the roast in a Dutch oven, then adding the remaining ingredients and roasting it.
Directions:
Step 1: Heat the vegetable oil in an electric skillet set to 325°F. Season both sides of the pot roast with salt and pepper.
Step 2: Place the roast in the skillet, browning it for 5-6 minutes on each side.
Step 3: Combine the French onion soup with 2 cups of water and pour it over the browned roast.
Step 4: Cover the skillet and reduce the heat to 225°F. Let the roast cook for 3 hours, flipping it halfway through.
Step 5: If the liquid starts to thicken too much, add more water to prevent it from drying out.
Step 6: During the last hour of cooking, add the mushrooms and carrots.
Step 7: Optional: You can skip adding potatoes if you prefer mashed potatoes on the side, as I did for my husband, who enjoys them that way.
