Growing up, my family was all about Red Lobster. It’s the go-to spot for cheddar biscuits, shrimp scampi, and bringing a taste of the ocean to the Midwest. What’s not to love?
My absolute favorite was the shrimp scampi—not your typical scampi, but a dish inspired by it, packed with shrimp and without the noodles. Recently, my dad asked if I could recreate it, and I took on the challenge. Here’s the result.
To make this delicious Famous Red Lobster Shrimp Scampi, you’ll need:
Ingredients:
1 lb medium shrimp, peeled and deveined
1 tablespoon pure olive oil
2 tablespoons finely chopped garlic
1 1/2 cups white wine (I prefer chardonnay)
Juice of 1/2 fresh lemon
1 teaspoon Italian seasoning
1/2 cup softened butter
1 tablespoon parsley
1/2 cup grated Parmesan cheese
Directions:
Step 1: Heat a cast-iron skillet and add olive oil.
Step 2: Cook the shrimp until tender and no longer translucent, then reduce the heat. Remove the shrimp and set them aside.
Step 3: Add the garlic to the skillet and cook for 2-3 minutes, making sure it doesn’t brown, as this can turn it bitter.
Step 4: Pour in the white wine and lemon juice, cooking until the wine reduces by half. Once reduced, add the Italian seasoning.
Step 5: Lower the heat and add the butter. Be careful not to let the pan get too hot, or the butter may separate.
Step 6: Return the shrimp to the skillet, stir in the parsley, and season with salt and pepper to taste.
Finish by sprinkling with grated Parmesan cheese. Enjoy!
