Easy Smothered Chicken

For a comforting, home-cooked meal, give this Simple Smothered Chicken a try. Succulent chicken breasts are enveloped in a savory gravy and gently slow-cooked to create a dish that’s tender, bursting with flavor, and ideal for a cozy family dinner.

Ingredients:

6 medium-sized potatoes

6 boneless, skinless chicken tenders

1 small onion, thinly sliced

1 (10 oz) can of Campbell’s cheddar cheese soup

1 1/4 cups milk

6-8 slices of bacon, chopped and cooked with drippings reserved

1/2 to 1 cup shredded cheese (adjust based on your preference)

Salt and pepper to taste

Instructions:

Step 1: In a bowl, whisk together the cheddar cheese soup and milk until smooth. Reserve 1 cup of this mixture along with 1 cup of cheese for later use.

Step 2: Wash, peel, and thinly slice the potatoes (about 1/4 inch thick). Lightly spray a 13×9 inch baking dish with cooking spray. Layer the bottom of the dish with a single layer of potato slices, then pour 1/3 of the soup mixture over the potatoes. Season with salt and pepper. Repeat this process twice more, creating three layers of potatoes, each topped with soup mixture and seasoning. Finally, spread the sliced onions over the top.

Step 3: Cover the dish tightly with aluminum foil and bake in a preheated oven at 350°F for 30 minutes.

Step 4: While the potatoes are baking, cut the bacon into 1/2-inch strips and cook in a skillet over medium-high heat until crispy. Use a slotted spoon to remove the bacon, setting it aside.

Step 5: Season the chicken tenders with salt and pepper, then sauté them in the reserved bacon drippings over medium-high heat until they are lightly browned on both sides (they don’t need to be fully cooked).

Step 6: After 30 minutes, remove the dish from the oven and uncover. Place the chicken tenders on top of the potatoes and pour the reserved soup mixture over them. Cover the dish again with foil and return to the oven for another 30 minutes.

Step 7: Uncover the dish, sprinkle the remaining shredded cheese over the top, and add the cooked bacon pieces. Return the dish to the oven, uncovered, for another 5-10 minutes, or until the cheese is melted and bubbly.
