EASY CORN CASSEROLE

Ingredients

  • 2 cans of whole kernel corn (drain one, keep the liquid in the other)
  • 1 can of cream-style corn
  • 1 stick of melted butter
  • 8 oz of sour cream
  • 1 package of corn muffin mix (Martha White or Jiffy)
  • 1/2 cup of shredded cheddar cheese
  • Optional: a pinch of red pepper

Instructions

  1. Preheat your oven to 350°F.
  2. Lightly grease a casserole dish with butter.
  3. In a large mixing bowl, combine the drained and undrained cans of whole kernel corn, cream-style corn, corn muffin mix, sour cream, melted butter, and shredded cheddar cheese. Stir or whisk until the mixture is well blended.
  4. For an extra kick, sprinkle some red pepper over the top.
  5. Pour the mixture into the greased casserole dish and bake for 45-55 minutes, or until the top turns golden brown.
