Ingredients:

  • 2 tablespoons olive oil or unsalted butter
  • 1 small shallot or onion, finely diced
  • 1 pound boneless, skinless chicken thighs or breasts, sliced into strips
  • Salt and black pepper, to taste
  • 2 cups cremini or button mushrooms, sliced
  • 2 cloves garlic, finely minced
  • 1 tablespoon cornstarch or all-purpose flour
  • 1 ¾ cups chicken or vegetable broth
  • 1 cup plain Greek yogurt or sour cream
  • 2 teaspoons whole-grain mustard or Dijon mustard
  • 1 teaspoon Worcestershire sauce (optional, for extra depth)
  • Fresh parsley, chopped (for garnish)
  • Cooked fettuccine or egg noodles, for serving

Directions:

Heat the Oil: In a large skillet over medium heat, warm the olive oil (or butter).

Sauté the Aromatics: Add the shallot (or onion) and cook until soft and translucent.

Cook the Chicken: Season the chicken strips with salt and black pepper, then add them to the skillet. Sear until golden brown on all sides.

Add the Mushrooms & Garlic: Stir in the sliced mushrooms and garlic, cooking until the mushrooms become tender and release their juices.

Thicken the Sauce: Sprinkle the cornstarch (or flour) over the mixture, stirring to coat. Let it cook for another minute to eliminate any raw taste.

Simmer: Pour in the chicken or vegetable broth, stirring well. Allow it to simmer for about 5 minutes, until the sauce thickens slightly.

Incorporate Creamy Elements: Reduce the heat to low and gently stir in the Greek yogurt (or sour cream), mustard, and Worcestershire sauce (if using). Mix well and heat through without boiling.

Serve & Garnish: Spoon the creamy stroganoff over cooked fettuccine or egg noodles, garnishing with fresh parsley for a pop of color and flavor.
