Crockpot Mac and Cheese

Ingredients:

  • 1 box (16 ounces) elbow macaroni
  • 4 cups whole milk
  • 8 ounces extra-sharp yellow cheddar cheese, shredded
  • 8-10 ounces extra-sharp white cheddar cheese, shredded
  • ½ cup grated Parmesan cheese
  • 4 ounces cream cheese, softened
  • 8 ounces sour cream
  • 1 ½ teaspoons sea salt
  • ½ teaspoon white pepper
  • 1 teaspoon ground mustard

Instructions:

  1. Fill a large pot halfway with water and bring it to a boil.
  2. Once boiling, add a splash of olive oil along with the macaroni.
  3. Cook the macaroni for 2-3 minutes, then drain.
  4. Transfer the drained macaroni to a slow cooker.
  5. Pour in the milk, shredded cheddar cheeses, Parmesan, and seasonings.
  6. Set the slow cooker to low and cook for 1 hour, stirring occasionally.
  7. Cut the cream cheese into cubes and add to the slow cooker along with the sour cream.
  8. Stir until the cream cheese melts and blends in.
  9. Continue cooking on low for another 20-30 minutes, until everything is hot and creamy.
  10. Serve immediately, optionally topped with crispy bacon.
