Creamy Ranch Chicken is a go-to dish in our household, especially when it’s made in the crockpot. Tender chicken, hearty potatoes, and sweet baby carrots are slow-cooked to perfection, resulting in a flavorful and creamy meal that everyone loves!
I’m a huge fan of my crockpot. It’s my trusty kitchen companion, no matter the season. Slow cookers are true time-savers, especially on those hectic days! It’s incredibly satisfying to have dinner prepped and cooking early in the day. Plus, the aroma that fills the house all day long is a delightful bonus!
Ingredients:
4 boneless, skinless chicken breasts
6 medium Russet potatoes, cut into 2-inch chunks
2 cups baby carrots
1 large (23 oz.) can condensed cream of chicken soup
1 (1 oz.) packet of dry ranch dressing mix (or try my homemade version below)
1/2 cup milk
Fresh chopped parsley (optional)
Instructions:
Step 1: Coat a large crockpot (I use a 7-quart size) with non-stick spray. Arrange the potato pieces and baby carrots at the bottom of the crockpot. Place the chicken breasts on top.
Step 2: In a medium bowl, whisk together the cream of chicken soup, dry ranch dressing mix, and milk. Pour this mixture evenly over the chicken.
Step 3:Cover the crockpot with its lid and cook on High for 5 to 6 hours, or on Low for 8 to 9 hours.
Step 4:For a finishing touch, sprinkle fresh chopped parsley over each serving if desired.
