Crispy Butter Chicken

Ingredients:

4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

2 large eggs, beaten

2 cups breadcrumbs

1/2 cup butter

Directions:

  1. Pound the chicken breasts to an even thickness with a meat mallet.
  2. In a shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. Dredge each chicken breast in the flour mixture, dip into the beaten eggs, then coat thoroughly with breadcrumbs.
  4. Melt the butter in a large skillet over medium heat.
  5. Fry the chicken breasts in the butter for 4-5 minutes per side, or until golden brown and fully cooked.
  6. Transfer to a plate lined with paper towels to drain off excess butter.
  7. Serve hot, optionally garnished with fresh parsley.
