Ingredients:

8 cups of water or vegetable broth

1 package (6-8 oz) of spreadable cheese wedges, like Laughing Cow or President’s

1 brie cheese wheel (8 oz)

1 finely chopped onion

1 peeled and shredded carrot

1-2 stalks of celery, thinly sliced or finely diced

3 medium potatoes, peeled and chopped

1 pound of peeled and deveined shrimp

1-2 dry bay leaves

Salt and ground black pepper to taste

1/2 to 1 tablespoon of dry herbs and spices, such as Trader Joe’s Onion Salt, Old Bay seasoning, garlic powder, onion powder, dried parsley, chives, shallots, etc.

Fresh herbs, minced (parsley, chives, dill, etc.)

Instructions:

Step 1: In a medium pot, bring the water or broth to a boil. Meanwhile, peel the spreadable cheese wedges and cut the rind off the brie, chopping it into small cubes (discard the rind).

Step 2: Prepare the vegetables by chopping the onion, grating the carrot, slicing or finely dicing the celery, and cutting the potatoes into small cubes.

Step 3: Add the cheese wedges to the boiling water, whisking until they are fully dissolved. Then, add the brie cheese cubes. The brie will soften but may not fully melt.

Step 4: Stir in the onion, carrots, celery, potatoes, and bay leaves. Season with salt, pepper, and your choice of dry herbs and spices. Simmer over medium-low heat for about 15 minutes, or until the potatoes are tender.

Step 5: While the potatoes are cooking, peel and devein the shrimp if necessary.

Step 6: Add the shrimp to the soup, cooking for about 5 minutes or until they turn pink. Be careful not to overcook. Remove the soup from heat as soon as the shrimp are done, discard the bay leaf, and garnish with fresh herbs.
