Creamy Cinnamon Sugar Roll-Ups

Ingredients

  • 16 slices of brioche or white bread (crust removed)
  • 8 oz (225g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 2 tsp cinnamon
  • ¾ cup unsalted butter, melted

Instructions

  1. Prepare the Filling: In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Mix the Coating: In another bowl, combine granulated sugar and cinnamon. Set aside.
  3. Prepare the Bread: Flatten each bread slice with a rolling pin until thin. Spread a generous layer of the cream cheese mixture over each slice.
  4. Roll and Coat: Tightly roll up each slice, dip in melted butter, then roll in the cinnamon-sugar mixture until fully coated.
  5. Bake: Place roll-ups on a parchment-lined baking sheet. Bake in a preheated oven at 350°F (175°C) for 15-18 minutes or until golden brown and crisp.
  6. Serve: Allow to cool slightly before serving. Best enjoyed warm!

Notes

  • For the filling, a tiny pinch of salt can really bring out the sweetness – give it a try!
  • When you’re flattening the bread, aim for it to be about 2-3mm thin – that’s the sweet spot for rolling!
  • Keep an eye on those roll-ups in the oven around the 12-minute mark, just to make sure they don’t get too toasty, as ovens can be a bit different!
