- 16 slices of brioche or white bread (crust removed)
- 8 oz (225g) cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup granulated sugar
- 2 tsp cinnamon
- ¾ cup unsalted butter, melted
Instructions
- Prepare the Filling: In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Mix the Coating: In another bowl, combine granulated sugar and cinnamon. Set aside.
- Prepare the Bread: Flatten each bread slice with a rolling pin until thin. Spread a generous layer of the cream cheese mixture over each slice.
- Roll and Coat: Tightly roll up each slice, dip in melted butter, then roll in the cinnamon-sugar mixture until fully coated.
- Bake: Place roll-ups on a parchment-lined baking sheet. Bake in a preheated oven at 350°F (175°C) for 15-18 minutes or until golden brown and crisp.
- Serve: Allow to cool slightly before serving. Best enjoyed warm!
Notes
- For the filling, a tiny pinch of salt can really bring out the sweetness – give it a try!
- When you’re flattening the bread, aim for it to be about 2-3mm thin – that’s the sweet spot for rolling!
- Keep an eye on those roll-ups in the oven around the 12-minute mark, just to make sure they don’t get too toasty, as ovens can be a bit different!
