Creamy Cajun Shrimp Pasta with Sausage

  • 1 teaspoon Cajun or Creole seasoning
  • ½ teaspoon dried oregano
  • 2 tablespoons olive oil
  • 6 oz andouille or smoked sausage, thinly sliced
  • 10 oz fettuccine pasta
  • ½ yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 teaspoons Cajun or Creole seasoning
  • 1 teaspoon brown sugar
  • 2-3 cloves garlic, chopped
  • ½ cup crushed tomatoes
  • 1 cup sodium-free chicken broth
  • 1 cup heavy cream
  • ⅔ cup grated Parmesan cheese
  • 1 tablespoon chopped parsley

Instructions:

  1. Season shrimp with salt, pepper, Cajun seasoning, and oregano. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2 minutes on each side. Remove from skillet and set aside.
  2. In the same skillet, add a bit more olive oil and the sausage. Cook until caramelized, about 4-5 minutes. Remove and set aside.
  3. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  4. Reduce heat to medium and add more olive oil if needed. Sauté the onion and red bell pepper with Cajun seasoning, brown sugar, and a pinch of salt until softened. Stir in the garlic and cook for about 30 seconds until fragrant.
  5. Add crushed tomatoes, chicken broth, and heavy cream. Simmer, stirring occasionally and scraping up any browned bits from the pan, for a couple of minutes.
