Ingredients

  • 1 box of vanilla or butter-flavored cake mix
  • 1/3 cup unsalted butter, softened
  • 2 large eggs, divided
  • 1 can (29 ounces) of peach slices, well-drained
  • 8 ounces of cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

Prepare the Oven & Pan
  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 13×9-inch baking dish with cooking spray.
Make the Crust
  1. In a large bowl, combine the cake mix, softened butter, and one egg until a crumbly texture forms.
  2. Set aside 1 1/2 cups of this mixture for the topping.
  3. Press the remaining mixture evenly into the bottom of the prepared baking dish.
  4. Bake for 10 minutes to set the base.
Prepare the Filling
  1. Cut the drained peach slices into small chunks and set them aside.
Cream Cheese Layer
  1. In a separate bowl, beat the softened cream cheese, sugar, remaining egg, and vanilla extract until smooth.
Assemble & Bake
  1. Evenly spread the chopped peaches over the pre-baked crust.
  2. Pour the cream cheese mixture over the peaches, spreading it out evenly.
  3. Sprinkle the reserved crumbly mixture on top.
  4. Bake for 30 minutes or until the topping turns golden brown.
Cool & Serve
  1. Let the bars cool for at least 30 minutes before slicing.
  2. Store leftovers in the refrigerator for freshness.
