- 1 box of vanilla or butter-flavored cake mix
- 1/3 cup unsalted butter, softened
- 2 large eggs, divided
- 1 can (29 ounces) of peach slices, well-drained
- 8 ounces of cream cheese, softened
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
Prepare the Oven & Pan
- Preheat the oven to 350°F (175°C).
- Lightly grease a 13×9-inch baking dish with cooking spray.
Make the Crust
- In a large bowl, combine the cake mix, softened butter, and one egg until a crumbly texture forms.
- Set aside 1 1/2 cups of this mixture for the topping.
- Press the remaining mixture evenly into the bottom of the prepared baking dish.
- Bake for 10 minutes to set the base.
Prepare the Filling
- Cut the drained peach slices into small chunks and set them aside.
Cream Cheese Layer
- In a separate bowl, beat the softened cream cheese, sugar, remaining egg, and vanilla extract until smooth.
Assemble & Bake
- Evenly spread the chopped peaches over the pre-baked crust.
- Pour the cream cheese mixture over the peaches, spreading it out evenly.
- Sprinkle the reserved crumbly mixture on top.
- Bake for 30 minutes or until the topping turns golden brown.
Cool & Serve
- Let the bars cool for at least 30 minutes before slicing.
- Store leftovers in the refrigerator for freshness.
