Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, as needed
2 tablespoons olive oil
1/2 cup chicken broth
1/4 cup white wine (optional)
2 cloves garlic, finely minced
2 tablespoons butter
1/2 pound egg noodles
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese
Instructions:
- Season the chicken breasts with a sprinkle of salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken, cooking for 6-8 minutes per side until golden brown and fully cooked.
- Remove the chicken from the skillet and set aside.
- In the same skillet, pour in chicken broth, white wine, and garlic. Bring to a boil, then lower the heat and simmer until the liquid reduces by half.
- As the sauce reduces, cook the egg noodles according to the package instructions, then drain them.
- Mix the noodles with butter, fresh parsley, and Parmesan cheese.
- Slice the cooked chicken and serve it over the prepared noodles.
