Chicken with Buttered Noodles

Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper, as needed

2 tablespoons olive oil

1/2 cup chicken broth

1/4 cup white wine (optional)

2 cloves garlic, finely minced

2 tablespoons butter

1/2 pound egg noodles

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Instructions:

  1. Season the chicken breasts with a sprinkle of salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken, cooking for 6-8 minutes per side until golden brown and fully cooked.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, pour in chicken broth, white wine, and garlic. Bring to a boil, then lower the heat and simmer until the liquid reduces by half.
  5. As the sauce reduces, cook the egg noodles according to the package instructions, then drain them.
  6. Mix the noodles with butter, fresh parsley, and Parmesan cheese.
  7. Slice the cooked chicken and serve it over the prepared noodles.
