Chicken Parmesan Casserole

Ingredients:

2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup Italian breadcrumbs

1/2 cup grated Parmesan

2 cups marinara sauce

2 cups shredded mozzarella

1 tsp garlic powder

1 tsp dried basil

1 tsp dried oregano

2 tbsp olive oil

Fresh basil or parsley for garnish (optional)

Directions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a bowl, mix together breadcrumbs, Parmesan, garlic powder, basil, and oregano.
  3. Coat the chicken pieces with olive oil, then toss them in the breadcrumb mixture until well coated.
  4. Spread the chicken evenly in the baking dish.
  5. Pour marinara sauce over the chicken, followed by a layer of shredded mozzarella.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Garnish with fresh basil or parsley, if desired.
