Ingredients
1 lb chicken breast, pounded into thin cutlets
4 ounces of lean boiled ham, sliced thinly (4 slices)
4 ounces of low-fat Swiss cheese, sliced thinly (4 slices)
Cooking spray
1 cup of fresh mushrooms, sliced
1 large shallot, finely minced
1/2 cup of white wine
1/4 cup of fat-free, low-sodium chicken broth
1 teaspoon of dried tarragon
Salt and pepper to taste
Directions
Step 1: Divide the pounded chicken breast into 8 thin cutlets. Lay 4 cutlets flat, and place a slice of ham and cheese on top of each. Cover with the remaining 4 cutlets.
Step 2: Heat a large nonstick skillet over medium-high heat, lightly coated with cooking spray. Cook the layered chicken-ham-cheese bundles, carefully turning once, for 8-10 minutes until they are golden and thoroughly cooked. Transfer to a plate and keep warm.
Step 3: Respray the skillet and sauté the mushrooms and minced shallot over medium-high heat for about 3 minutes, stirring occasionally. Pour in the white wine, deglazing the pan by scraping up any browned bits, and cook until the wine is reduced by half.
Step 4: Stir in the chicken broth and tarragon, allowing it to simmer for 2 minutes. Add any accumulated chicken juices from the plate, and season with salt and pepper to taste.
