CHICKEN ALFREDO LASAGNA ROLLS

These Chicken Alfredo Lasagna Rolls are a cheesy, creamy, and utterly satisfying dish made with homemade Alfredo sauce, tender chicken, and three types of cheese. It’s the perfect meal for prepping ahead, offering a cozy and comforting option that the whole family will adore!

It’s also a great way to use up leftover rotisserie chicken, or you can bake a chicken breast and chop it into bite-sized pieces. These rolls can be enjoyed right after cooking or frozen for an easy dinner later in the week.

Our Chicken Alfredo Lasagna Rolls feature homemade Alfredo sauce, chicken, lasagna noodles, and plenty of cheese. Here’s what you’ll need:

Ingredients:

Garlic Alfredo Sauce:

9 lasagna noodles

2 1/2 cups Alfredo sauce (store-bought or homemade)

2 cups cooked, shredded chicken

Oregano and garlic salt to taste

3 cups shredded mozzarella (or your preferred cheese), divided

1/2 cup butter

4 tablespoons cream cheese

2 cups heavy cream or half and half

2 teaspoons garlic powder

1/2 teaspoon minced fresh garlic

Salt and freshly ground black pepper to taste

1/2 teaspoon dried oregano

2/3 cup Parmesan cheese

Directions:

Step 1: Preheat your oven to 350°F and coat an 8×8-inch baking dish with non-stick spray. Pour 1/2 cup of Alfredo sauce to lightly cover the bottom.

Step 2: Boil 8-10 cups of water in a large pot and cook the lasagna noodles until al dente. Cook a couple of extra noodles as a backup, just in case some break while stirring.

Step 3: Drain and rinse the noodles under cold water, then lay them out individually. Pat dry with a paper towel.

Step 4: Spread 2 tablespoons of Alfredo sauce on each noodle, then sprinkle with oregano and garlic salt. Evenly distribute 1/9 of the shredded chicken over each noodle and top with about 3 tablespoons of cheese.

Step 5: Roll the noodles starting from one end, lifting gently to avoid squishing the filling. Place the rolls seam-side down in the pan to keep them intact.

Step 6: Once all the rolls are in the dish, pour the remaining Alfredo sauce over the top and sprinkle the rest of the cheese.

Step 7: Bake for 30 minutes or until the cheese is melted and golden on top.

Garlic Alfredo Sauce:

Step 1: Melt butter in a medium saucepan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Step 2: Add the cream cheese, stirring until smooth and melted. Slowly whisk in the heavy cream.

Step 3: Season with garlic powder, salt, and pepper, and bring the sauce to a simmer. Whisk frequently for 15 minutes until it thickens.

Step 4: Stir in Parmesan cheese, and once melted, remove from heat. Enjoy!
