Ingredients:
- 1 1/2 pounds lean ground beef
- 1 large onion, finely diced
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1/2 teaspoon dried oregano
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- 1 (28-ounce) can crushed tomatoes or your favorite marinara sauce
- 12 ounces elbow macaroni
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
Instructions:
Step 1: Heat the olive oil in a large skillet over medium heat. Add the diced onion with a pinch of salt and sauté until softened. Stir in the garlic and cook for 30 seconds.
Step 2: Add the ground beef, breaking it apart as it browns. Season with salt, pepper, oregano, and smoked paprika. Stir in the crushed tomatoes and bring to a gentle simmer. Reduce the heat and let it cook for 30–40 minutes, stirring occasionally.
Step 3: Meanwhile, cook the macaroni in salted boiling water until just under al dente. Drain and add to the beef mixture, stirring to combine. Adjust seasoning if needed.
Step 4: Transfer the mixture to a greased baking dish. Cover with foil and refrigerate for up to 2 days or freeze for longer storage.
Step 5: When ready to bake, preheat the oven to 375°F. Bake for about 30 minutes if fresh, or 45 minutes if chilled.
Step 6: Remove the foil, sprinkle the cheeses on top, and broil for 3–5 minutes until bubbly and golden. Serve hot.
