Baked Sweet and Sour Chicken

Ingredients:

For the Chicken:

1 1/2 lbs boneless, skinless chicken breasts, cut into small pieces

1/2 cup cornstarch

2 large eggs, beaten

1/4 cup vegetable oil

For the Sweet and Sour Sauce:

3/4 cup sugar

1/2 cup apple cider vinegar

1/4 cup ketchup

1 tablespoon soy sauce

1 teaspoon garlic powder

1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 325°F (165°C) and lightly grease a 9×13-inch baking dish.
  2. Toss the chicken pieces in cornstarch, making sure they’re evenly coated, then dip each piece into the beaten eggs.
  3. Heat vegetable oil in a skillet over medium-high heat and cook the chicken until it’s golden brown on all sides (about 3-4 minutes, no need to cook fully). Transfer the chicken to the prepared baking dish.
  4. In a bowl, whisk together the sugar, vinegar, ketchup, soy sauce, garlic powder, and salt until smooth.
  5. Pour the sauce evenly over the chicken in the baking dish.
  6. Bake, uncovered, for 45-50 minutes, stirring every 15 minutes to ensure the chicken is fully coated and cooked through.
  7. Serve over rice and garnish with green onions or sesame seeds if desired.
