This One-Pan Chicken Delight is a flavorful and easy-to-make dish that’s perfect for those hectic weeknights, weekend dinners, or really any time you need a simple yet satisfying meal! I’m a big fan of one-dish recipes—anything that serves as both the main course and the side dish is a winner in my book.
The term “Forgotten Chicken” might be a bit puzzling, but it was what initially drew me to this recipe. After making it several times, I’m convinced the name comes from the fact that you simply toss all the ingredients into the casserole dish and let the oven do the rest. You can literally “forget” about it until it’s time to eat!
INGREDIENTS:
1 lb boneless, skinless chicken breasts
2 cups Minute rice (I used brown rice)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can of water (measured using one of the soup cans)
1 tbsp butter
1 envelope Lipton onion soup mix
DIRECTIONS:
Step 1: Preheat your oven to 350°F. Butter a 9 x 13-inch baking pan using the 1 tablespoon of butter.
Step 2: In a medium bowl, mix together the cream of mushroom soup, cream of chicken soup, 1 can of water, and Minute rice.
Step 3: Pour the mixture into the buttered pan.
Step 4: Place the chicken breasts on top of the rice mixture.
Step 5: Evenly sprinkle the Lipton onion soup mix over the chicken breasts.
Step 6: Cover the pan with foil and bake in the preheated oven for about 1 to 1 1/2 hours, or until the chicken is fully cooked.
