Hello! I’m Karen Wilson and welcome to 101 Diet Recipes ! I’m passionate about crafting high-protein, low-carb recipes using real ingredients, and I also enjoy meal prepping. Life’s too short to spend every night cooking, so we’re here to make healthy recipes even easier for you!

When I’m not whipping up new recipes or capturing moments through my camera lens, you’ll find me traveling with my family, dancing in the kitchen, managing my naturally curly hair, or singing along to ABBA songs.

Although my professional background is in accounting and banking, I swapped my calculator for a spatula in 2018 because life is too short not to pursue our dreams. Plus, being creative is much more enjoyable than crunching numbers and staring at spreadsheets!

Since food blogging is a 70-80 hour per week job, it is not only a full-time business for me, but I also feel blessed to work with my daughter, Madi, who handles social media and admin. Additionally, my husband, Derek, recently retired early from his corporate job to assist with recipe development (he’s the meat master and expert kitchen cleaning crew!). Madi and I attended a food blogging conference together.

How 101 Diet Recipes was started

After being diagnosed as pre-diabetic and having an immune system disorder, along with numerous serious food sensitivities, I eliminated dairy, gluten, and sugar from my diet. I shifted my culinary experiments from desserts and cookies to healthier whole foods.

Around this time, my husband began a keto diet to kickstart his weight loss. While keto isn’t intended as a long-term health plan, it helped him lose 40 lbs before transitioning to a low-carb, clean eating lifestyle. Our site features numerous low-carb recipes that have supported his and our readers’ weight loss journeys over the years.

These lifestyle and health changes inspired us to start Whole Lotta Yum, focusing on healthy recipes with fresh ingredients and whole foods. Our website offers a wide variety of meal prep, low carb, gluten-free, keto-friendly, sugar-free, and air fryer recipes.

What began as a hobby in 2018 quickly grew into a full-time business by the end of the year. We are incredibly thankful for our 1 million+ monthly visitors and 50,000 email subscribers. Your continued support and trust are beyond words.

We prioritize fresh ingredients and minimize processed foods in our daily lives. However, we’re still human, have kids, and enjoy old family holiday favorites during Thanksgiving and Christmas (hello, once-a-year Jello pretzel salad). Life is all about balance.

Cooking expertise

I’m a self-taught home chef with over 30 years of experience experimenting in the kitchen. Constantly seeking to expand my knowledge of food science, I study, test, and draw inspiration from foodie travels and global cooking classes.

In 2024, my goal is to become a certified macro coach and licensed nutritionist, allowing me to further serve my audience with professional expertise in food education.
